Sorry, everybody, but never fear -- we're still here. There is news: Dad received his passport yesterday, so international travel looms in our future. Yaay! He applied for it about the same time we last posted here, so that tells you how long the process is taking these days.
By the way, Father's Day is fast approaching. Snail mail, emails, $$$ all would be appreciated. Even better, give Dad a phone call and express your love. I wouldn't mind hearing your voices either.
Now down to serious business. I keep getting requests for my famous potato salad recipe, so here it is (with cook's comments as well):
4 c. diced, cooked potatoes (about 5 medium) 1 1/2 c. sliced celery (less if Bartons are coming over)
some sliced green onions (none, if Morgan, Gramma Gail, or Richie are coming over)
1/4 c. sliced, diced radishes (this is just color; leave it out if you don't like radishes)
2 T. snipped parsley
some diced dill pickles
shredded carrots (optional)
6-12 boiled eggs (only 1 if Eryka is coming over)
Sauce:
1 c. mayonnaise (plus some, if you like it creamy. I DO)
1 T. vinegar (plus some, if you like it tangy. I DO)
2 tsp. prepared mustard (YUM! My favorite. I'm generous with this too.)
1/2 tsp. celery seeds
1 - 1 1/2 tsp. salt
1/8 tsp. pepper

Hooray for potato salad! I guess this means you will not be visiting and making it for us, but I am thrilled to have your recipe, and to see that you are still posting. Congrats to Dad on getting his passport, passports are cool.
International travel? That is so great. I hope that summer is treating you well. Thanks for blogging again. It just lets us know that you are still alive and well.

This is Drew's favorite! I think I'll make it for father's day! I like the idea of international travel!!!
So, over one year later I am using this recipe. Morgan requested "Gramma Gail's potato salad" for her birthday barbeque. I've been making potato salad her whole life, but apparently mine is not quite up to par! Thanks, Gramma Gail.
